Ingredients

  • 1/2 teaspoon paprika
  • 3/4 cup club soda or ice-cold water (adjust as needed for consistency)

Instructions

  1. In a large bowl, whisk together flour, cornstarch, baking powder, salt, sugar, onion powder, and paprika.
  2. Slowly add cold club soda or water, stirring gently until just combined. Do not overmix.
  3. Heat oil in a deep skillet to 350°F.
  4. Dip fish, chicken, or veggies in batter. Let excess drip off.
  5. Fry in batches for 3–5 minutes per side, or until golden and crispy.
  6. Transfer to a paper towel-lined plate or rack to drain.
  7. Serve hot with tartar sauce or lemon wedges.
