Description

Delicious chocolate pecan cookies with a rich flavor and a chewy texture.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter (cold, plus 2 tbsp for pecans)
  • 1 cup chopped pecans
  • 1/2 cup granulated sugar
  • 1 1/2 cups packed brown sugar
  • 1 large egg (at room temperature)
  • 1 large egg yolk (at room temperature)
  • 1 tablespoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips or chunks

Instructions

  1. In a small skillet, melt 2 tablespoons of butter over medium heat.
  2. Add chopped pecans and toast, stirring frequently, for 4-5 minutes until fragrant and golden brown.
  3. Remove from heat and let cool completely.
  4. In a medium bowl, whisk together the flour, cornstarch, salt, baking powder, and baking soda. Set aside.
  5. In the bowl of a stand mixer, cream the cold butter, granulated sugar, and brown sugar on high speed for 3-4 minutes until light and fluffy.
  6. Add the egg and egg yolk, one at a time, beating after each addition. Mix in the vanilla extract.
  7. Reduce the mixer speed to low and add the dry ingredients in 3 parts, mixing until just combined.
  8. Fold in the buttered pecans and chocolate chips.
  9. Scoop dough into 1-tablespoon-sized balls and place on a parchment-lined baking sheet.
  10. Refrigerate for at least 1-2 hours.
  11. When ready to bake, preheat oven to 350°F.
  12. Bake cookies for 10-13 minutes, or until edges are golden and centers are just set.
  13. Let cool on the pan for 4-5 minutes before transferring to a wire rack.

  • For a richer flavor, you can use dark brown sugar instead of light brown sugar.
