Deliciously roasted baby red potatoes topped with Parmesan and herbs.

- 1 pound baby red potatoes
- 1/2 cup unsalted butter
- 1/2 cup grated Parmesan cheese
- 2 teaspoons minced garlic or 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Place butter on a rimmed baking sheet and let it melt in the oven.
- Once melted, remove the pan and evenly sprinkle Parmesan, garlic, Italian seasoning, salt, pepper, and red pepper flakes over the butter.
- Rinse and dry the potatoes. Cut any larger ones in half to match size.
- Place potatoes cut-side down into the butter mixture. Press gently.
- Roast for 35–45 minutes until tops are fork-tender and bottoms are crispy and golden.
- Let potatoes rest for 5 minutes before removing to allow the cheese layer to set.
- Serve hot with extra Parmesan or fresh herbs, if desired.

- For a more robust flavor, consider adding more garlic or herbs.
