- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 4 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- 1 cup bell peppers or peas (optional)
- Salt to taste
- Pepper to taste
- Paprika to taste
- Thyme to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; sear until golden brown (5-7 minutes per side). Remove chicken and set aside.
- In the same skillet, sauté onions and garlic until translucent (3-4 minutes).
- Pour in chicken broth, scraping browned bits from the pan. Stir in heavy cream and seasonings; simmer for 5 minutes.
- Return chicken to the skillet, cover, and simmer for another 10-15 minutes until cooked through.
- Prepare rice according to package instructions while chicken simmers.
- Serve rice topped with creamy chicken; garnish with parsley if desired.
