Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 1 cup bell peppers or peas (optional)
  • Salt to taste
  • Pepper to taste
  • Paprika to taste
  • Thyme to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; sear until golden brown (5-7 minutes per side). Remove chicken and set aside.
  2. In the same skillet, sauté onions and garlic until translucent (3-4 minutes).
  3. Pour in chicken broth, scraping browned bits from the pan. Stir in heavy cream and seasonings; simmer for 5 minutes.
  4. Return chicken to the skillet, cover, and simmer for another 10-15 minutes until cooked through.
  5. Prepare rice according to package instructions while chicken simmers.
  6. Serve rice topped with creamy chicken; garnish with parsley if desired.
