Description
This easy taco pasta skillet combines ground beef, elbow macaroni, and savory seasonings for a delicious one-pan meal.
Ingredients

- 1 lb. ground beef (ground sausage, or half and half)
- 8 oz. elbow macaroni
- 1 packet taco seasoning (1 oz.)
- 1 can corn (kernels, 10 oz. drained)
- 1 can Rotel (10 oz.)
- 1/2 red onion (diced)
- 1 c water
- 1 c beef broth (or water)
- 3/4 c cheddar cheese (optional)
- Doritos (crushed, served on top, optional)
Instructions
- In a large/deep skillet, begin to saute the ground beef and chopped onion. Once the meat is browned, stir in the taco seasoning. Continue to saute for another 2-3 minutes.
- Add drained can of corn, Rotel, uncooked macaroni noodles and water/broth to the skillet. Stir to combine, bring to a boil. Cover and reduce heat.
- Continue to simmer for 10-12 minutes, or until the pasta is cooked. We like to fold in shredded cheese so it melts and serve. Garnish with shredded cheese, crushed chips, sour cream, and avocado slices.

- This dish can be customized with your favorite toppings.
