- 2 large boneless, skinless chicken breasts, sliced
- 12 oz pasta (fettuccine or penne)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup reserved pasta water
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the pasta in a large pot of salted water to a boil. Cook your pasta until al dente according to package instructions. Before draining, reserve about ½ cup of the pasta water.
- Sear the chicken. While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the sliced chicken with salt and pepper. Cook for 5–6 minutes per side until golden and fully cooked. Remove the chicken from the skillet and set aside.
- Build the garlic Parmesan sauce. In the same skillet, melt the butter. Add minced garlic and sauté for about 30 seconds until fragrant. Stir in the heavy cream and Italian seasoning. Let it gently simmer for 3–4 minutes. Slowly whisk in the grated Parmesan cheese.
- Bring it all together. Add the chicken back to the skillet. Add the drained pasta and toss everything together until well coated.
- Garnish and serve with fresh parsley and an extra dusting of Parmesan. Serve immediately while warm and creamy.
Notes
- Always let the chicken rest for a few minutes after cooking to keep it juicy and tender.
- If the sauce feels too thick, add a splash of reserved pasta water.
