Description

Delicious baked chicken taquitos made with shredded chicken, cheese, and salsa, wrapped in flour tortillas and baked until crispy.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup shredded cheddar and Monterey Jack cheese
  • 8 flour tortillas
  • ½ cup salsa
  • 2 tsp cooking oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper, then bake for about 25 minutes until fully cooked. Let cool slightly before shredding.
  3. In a bowl, combine shredded chicken, salsa, and cheese.
  4. Place about two tablespoons of the mixture onto each tortilla; roll tightly and place seam-side down on the baking sheet.
  5. Brush each taquito lightly with cooking oil.
  6. Bake for 15-20 minutes or until golden brown and crispy.

Notes
