Description

A healthy and delicious whole wheat pasta dish with fresh vegetables.


Ingredients

  • 8 oz whole wheat pasta
  • 2 cups fresh mushrooms (button or cremini), sliced
  • 2 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium vegetable broth
  • 3 tbsp nutritional yeast
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot, add pasta, and cook until al dente (about 8-10 minutes).
  2. Heat olive oil in a skillet over medium heat. Add garlic and mushrooms; sauté until golden brown (about 5 minutes).
  3. Stir in broccoli florets and vegetable broth. Cover and steam for 3-4 minutes until bright green.
  4. Drain pasta, reserving some water. Mix cooked pasta into the skillet with vegetables, adding reserved water for creaminess.
  5. Stir in nutritional yeast, salt, and pepper to taste. Serve hot.
