Ingredients

  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1 cooked chicken breast, chopped
  • 1/2 cup marinara sauce
  • 1 tablespoon grated parmesan cheese
  • Salt and black pepper, to taste
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Start by adding your cottage cheese to a blender or food processor. Add garlic powder, onion powder, Italian seasoning, and a pinch of salt and pepper. Blend until smooth and creamy—this will serve as your protein-rich “sauce” base.
  2. Chop your cooked chicken breast into bite-sized pieces. If you’re using leftover or rotisserie chicken, even better. Warm the marinara sauce in a small pan or microwave-safe bowl, then stir in the chicken until it’s coated and heated through.
  3. Spoon the whipped cottage cheese into a serving bowl. Pour the chicken and marinara mixture on top. Sprinkle with shredded mozzarella and a little parmesan cheese.
  4. If you’d like that classic melted cheese topping, pop the bowl under the broiler for 2-3 minutes or microwave for 30-60 seconds until the cheese is bubbly and golden.
  5. Top with fresh basil or parsley if desired, and dig in. You’ll be amazed at how satisfying and hearty this bowl is, without the heaviness of traditional Chicken Parm.
