- 1 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1 cooked chicken breast, chopped
- 1/2 cup marinara sauce
- 1 tablespoon grated parmesan cheese
- Salt and black pepper, to taste
- Fresh basil or parsley (optional, for garnish)
Instructions
- Start by adding your cottage cheese to a blender or food processor. Add garlic powder, onion powder, Italian seasoning, and a pinch of salt and pepper. Blend until smooth and creamy—this will serve as your protein-rich “sauce” base.
- Chop your cooked chicken breast into bite-sized pieces. If you’re using leftover or rotisserie chicken, even better. Warm the marinara sauce in a small pan or microwave-safe bowl, then stir in the chicken until it’s coated and heated through.
- Spoon the whipped cottage cheese into a serving bowl. Pour the chicken and marinara mixture on top. Sprinkle with shredded mozzarella and a little parmesan cheese.
- If you’d like that classic melted cheese topping, pop the bowl under the broiler for 2-3 minutes or microwave for 30-60 seconds until the cheese is bubbly and golden.
- Top with fresh basil or parsley if desired, and dig in. You’ll be amazed at how satisfying and hearty this bowl is, without the heaviness of traditional Chicken Parm.
