A delicious roasted chicken with lemon and garlic.
Ingredients

- 1 whole chicken (4–5 pounds)
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 lemon, quartered
- Fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C). Pat the chicken dry and place it in a roasting pan.
- In a bowl, mix softened butter, minced garlic, Parmesan cheese, salt, pepper, oregano, and thyme until well combined.
- Gently separate the skin from the chicken and spread half of the mixture underneath. Rub the rest over the outside of the chicken.
- Squeeze lemon wedges over the chicken and place them inside the cavity.
- Roast for about 1 hour or until the internal temperature reaches 165°F (75°C) and the skin is golden brown. Baste halfway through cooking.
- Let it rest for 10-15 minutes before carving. Garnish with parsley and serve warm.

- For added flavor, consider marinating the chicken overnight.
