Description
This recipe provides an easy way to make a copycat version of Rotel using canned ingredients.

- 1 cup diced tomatoes (canned, not drained)
- 1/4 cup green chiles (diced, 1/2 of a 4 oz. can)
- 1/4 cup onion (diced)
- 1/2 tbsp minced garlic
- 1/8–1/4 tsp salt (start with 1/8, mix and decide whether you want more)
- 1/4 jalapeno (seeded and diced fine, this is OPTIONAL to add more heat)
Instructions
- Combine all ingredients into a bowl, taste and add more salt if you’d like.
- Allow the mixture to sit for at least 30 minutes to an hour before using.
- Use in your favorite recipes.
- For a from-scratch version, use 4 ripe but still firm tomatoes, 3 fresh green chiles, 1/2 cup diced onions, 1 clove garlic, and 1/2 teaspoon salt to taste.
- For tomatoes, wash and rinse, and peel if desired. Use boiling water for easy peeling.
- Wash and rinse the green chiles and finely chop them, removing seeds if you prefer milder flavor.
- For extra flavor, finely dice half an onion and mince a clove of garlic, if desired.
- Combine the diced tomatoes, chopped green chiles, and any optional onion and garlic. Adjust salt to taste.
- Taste the mixture and adjust spices as needed for heat and flavor.
- Allow the mixture to sit for at least 30 minutes before using.
Notes
- To enhance the flavor, consider adding chili powder or more chopped green chiles.
- Letting the mixture sit develops the flavors better.
