Delicious and moist mango bread made with ripe mangoes.
Ingredients

- 2 ripe mangoes (peeled and chopped)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp salt
- 2 large eggs
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In one bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat eggs and mix in vegetable oil and vanilla extract. Fold in the chopped mangoes.
- Gradually add the wet mixture to the dry ingredients until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
- Allow cooling before slicing and enjoy!
