Taco Casserole

Description

A delicious Taco Casserole that combines ground beef, taco seasoning, and various toppings for a hearty meal.


Ingredients

  • 2 pounds ground beef
  • 2 tablespoons taco seasoning
  • ¾ cup water
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded cheddar cheese divided
  • 1 onion finely chopped and divided
  • 2 cups Homemade Bisquick Mix
  • 1 cup water
  • 1 green pepper diced
  • 2 tomatoes diced
  • 4 ounces diced green chilies

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. Take out a 9×13 casserole dish and set aside. Grease it lightly with cooking spray.
  3. Brown ground beef until no longer pink and drain.
  4. Add in the homemade taco seasoning, mixed with some warm water and let simmer for 3-4 minutes (to thicken).
  5. In a medium sized bowl, mix in the sour cream, mayonnaise, one half of the cheese, and half of the finely chopped onion. Set aside.
  6. In a new bowl, mix together the homemade biscuit mix and water until it forms a dough.
  7. Press this newly formed dough into the greased 9 x 13 inch pan, making sure it goes at least halfway up the sides of the dish.
  8. Cook together the remaining onions and green peppers until tender.
  9. Layer the remaining ingredients into the 9×13 on top of the dough in the following order: ground beef, diced tomatoes, green peppers and onions, green chilies, sour cream mixture, and remaining cheddar cheese.
  10. Bake for 30-35 minutes or until edges are slightly browned.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator.
  • Feel free to modify the ingredients based on your preferences such as adding corn or black beans.
