Baked Chicken with Tomato and Mozzarella

Description

A delicious baked chicken dish topped with tomato sauce, mozzarella cheese, and pepperonis, perfect for a family dinner.


Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • ½ onion
  • 1 8 oz tomato sauce
  • 1 can of diced tomatoes (15 oz)
  • ½ teaspoon salt
  • 1 teaspoon garlic salt (or can use garlic powder)
  • 1 teaspoon pepper
  • 1 Tablespoon Italian Seasoning
  • 2 cups Mozzarella cheese
  • 1 oz pepperonis (approximately 1214 slices)

Instructions

  1. Preheat the oven to 400 degrees F and spray a 9X13 baking pan with non stick cooking spray.
  2. Lay the chicken breasts out evenly in the baking pan and top with the onions.
  3. In a small bowl, stir together the tomato sauce, diced tomatoes, garlic salt, Italian seasoning, salt and pepper.
  4. Pour the mixture over the chicken in the baking pan.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165 degrees F.
  6. Top with shredded mozzarella cheese and sliced pepperonis.
  7. Bake for 5 more minutes in the oven to melt the cheese.
  8. Let the chicken set for 5-10 minutes, then serve warm. Enjoy!
