- 8 small corn tortillas
- 1 tablespoon olive oil

- 1 cup refried beans
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup finely chopped red onion
- 1 cup shredded cheddar or Monterey Jack cheese
- ½ cup sour cream
- ½ cup salsa
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Crisp the Tortillas: Preheat your oven to 400°F (200°C). Lightly brush both sides of the corn tortillas with olive oil and place them directly on a baking sheet. Bake for 8–10 minutes, flipping halfway through, until golden and crisp. They should feel firm and lightly blistered. Let them cool slightly—they will continue to crisp as they rest.
- Season the Chicken: In a skillet over medium heat, combine the shredded rotisserie chicken with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Warm for 4–5 minutes until heated through and fragrant. The spices wake up the chicken and give it that homemade depth.
- Warm the Beans: Heat the refried beans in a small saucepan or microwave until smooth and spreadable. Stir occasionally to prevent sticking.
- Assemble the Tostadas: Spread a generous layer of refried beans over each crispy tortilla. Add a hearty spoonful of seasoned chicken. Sprinkle with shredded cheese so it melts slightly from the warmth of the toppings. Top with lettuce, tomatoes, red onion, avocado slices, sour cream, and salsa. Finish with fresh cilantro.
- Serve immediately while the shells are crisp and the toppings are fresh.
