Description

Ingredients

  • 1 lb lean ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot or Dutch oven over medium heat, add a splash of olive oil. Once hot, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
  2. Stir in the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent and the garlic is fragrant.
  3. Pour in the diced tomatoes (with their juices) and tomato sauce. Add the beef broth, stirring everything together.
  4. Sprinkle in your Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  5. Add the broken lasagna noodles into the bubbling broth. Stir well and let it cook for about 10 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.
  6. Once the noodles are cooked, stir in the fresh spinach. Let it wilt down for about 2 minutes.
  7. In a separate bowl, mix together ricotta cheese with a pinch of salt and pepper. Once the soup is ready, serve it hot, adding a dollop of the ricotta mixture to each bowl. Sprinkle with shredded mozzarella and grated Parmesan.
