Description

This delicious banana bread is made using ripe bananas and can optionally include chocolate chips or walnuts.


Ingredients

Scale
  • 3 large ripe bananas (mashed, (1 cup))
  • ½ cup coconut sugar or brown sugar
  • ⅓ cup coconut oil (melted)
  • 3 medium eggs (or 2 large)
  • 2 teaspoons vanilla extract
  • 2 cups oat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup dark chocolate chips (optional or chopped walnuts)

Instructions

  1. Preheat oven to 350°F. Grease an 8×4-inch loaf pan with cooking spray and line with a piece of parchment paper.
  2. Add the 3 large ripe bananas (mashed), ½ cup coconut sugar or brown sugar, ⅓ cup coconut oil (melted), 3 medium eggs, and 2 teaspoons vanilla extract in a medium bowl. Mix well to combine. Set aside.
  3. In a separate bowl, mix the dry ingredients: 2 cups oat flour, 2 teaspoons baking powder, 1 teaspoon baking soda, and ¼ teaspoon salt.
  4. Pour the dry ingredients over the wet ingredients. Use a spatula to mix until no floury patches remain.
  5. Fold in the ⅓ cup dark chocolate chips, if using. Pour into the prepared loaf pan and sprinkle a few more chocolate chips on top, if you like.
  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes before removing from the pan to cool completely.

Notes

  • Store leftover banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • This banana bread can also be frozen for up to 3 months.
