- 1 pound Italian sausage
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 28-ounce can crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 ounces lasagna noodles, broken into pieces
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil, for garnish (optional)
Instructions
- In a large pot over medium heat, add olive oil and the Italian sausage. Cook until browned.
- Add onion and bell pepper; sauté for about 5 minutes. Stir in garlic for another minute.
- Pour in crushed tomatoes and broth; season with oregano, basil, salt, and pepper. Bring to a boil.
- Add lasagna noodles; reduce heat and simmer for 10-12 minutes until tender.
- Remove from heat and stir in ricotta cheese followed by mozzarella and Parmesan until melted.
- Serve hot with optional fresh basil garnish.
