Pesto Roasted Potatoes

Description

A delicious and easy recipe for roasted potatoes coated in pesto and topped with parmesan cheese.


Ingredients

  • 5 Russet potatoes
  • 1 10 ounce jar pesto sauce
  • ¾ cup parmesan cheese

Instructions

  1. Preheat oven to 450℉.
  2. Scrub (but don’t peel) potatoes and cut into large cubes.
  3. Place cut potatoes in a large Ziploc bag.
  4. Add pesto sauce to the bag and shake until all of the potatoes are coated.
  5. Pour contents out into a baking sheet and spread out evenly. Sprinkle on Parmesan cheese.
  6. Bake for 25-30 minutes, or until potatoes are golden.

Notes

  • For extra crispiness, make sure to spread the potatoes out evenly on the baking sheet.
  • Feel free to add other seasonings to the pesto for more flavor.
