- 16 ounces mini marshmallows, divided
- 3 ounces instant pistachio pudding mix
- 1 teaspoon pure vanilla extract
- 6 cups rice krispies cereal
- ½ cup dark chocolate, melted
Instructions
- Melt butter in a large pot over low heat. Add most of the marshmallows and stir until smooth. Tip: Keep heat low to prevent stiff treats.
- Remove from heat and stir in pistachio pudding mix until evenly blended. Tip: Mixing off heat avoids clumps.
- Stir in vanilla, then gently fold in cereal and remaining marshmallows. Tip: Fold gently to keep texture light.
- Press mixture lightly into a lined pan. Tip: Light pressure keeps bars soft.
- Drizzle melted dark chocolate over the top and let set. Tip: Zigzag drizzle creates clean slices.
