Cream Puffs with Dulce de Leche and Raspberries

Description

Delightful cream puffs filled with dulce de leche and topped with fresh raspberries, perfect for any occasion.


Ingredients

Scale
  • 1 cup water
  • 1/2 cup unsalted butter (1 stick cut into 8 pieces)
  • 1/8 tsp salt
  • 1 cup all-purpose flour (155 grams)
  • 4 eggs
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 tbsp cream cheese (softened)
  • 2 tbsp Greek yogurt (plain)
  • 1 pint Raspberries
  • 14 oz dulce de leche

Instructions

  1. In a medium-sized saucepan combine the water, salt, and butter. Melt the butter over medium heat; then add the flour and whisk until dough forms. Stir for about a minute and transfer the dough into the bowl of a stand mixer. Slightly cool dough.
  2. Using the paddle attachment to your mixer, mix the dough on medium speed adding eggs one at a time and mixing well after each addition. After you add the last egg, beat the dough for 2 minutes on medium speed and transfer the dough into a piping bag with a star nozzle.
  3. Preheat oven to 400 degrees F and line two baking sheets with parchment paper.
  4. Pipe out batter onto baking sheets making swirls that start from the inside moving your way upwards overlapping the bottoms.
  5. Bake in the preheated oven for 25-30 minutes. Insides should be hollow and moist, not wet.
  6. Cool and slice each puff pastry in half crosswise.
  7. Beat heavy whipping cream and powdered sugar until soft peaks form.
  8. In a separate bowl, stir softened cream cheese and Greek yogurt together. Add to the beaten cream mixture and continue to mix over medium speed until combined and creamy. Refrigerate until needed.
  9. Fill each half in the following order; dulce de leche cream, 1 fresh raspberry, whipped cream frosting, and top with another fresh raspberry. Refrigerate before serving.

Notes

  • Make sure the cream puffs are completely cooled before slicing.
  • For best results, refrigerate the assembled pastries for 30 minutes before serving.
