- 14 oz kielbasa (sliced)
- 2 cups broccoli florets
- 1 red bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 1 lb baby potatoes (halved)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp shredded parmesan
- 1 tbsp chopped parsley (optional)
Instructions
- Preheat oven to 400°F. Line a large baking sheet with parchment paper.
- Chop sausage and vegetables into bite-size pieces.
- In a large bowl, mix olive oil with garlic powder, onion powder, paprika, salt, and pepper.
- Add sausage and vegetables to the bowl and toss to coat.
- Spread evenly onto the prepared baking sheet.
- Bake for 15 minutes, toss, and bake another 10–15 minutes until everything is tender and lightly browned.
- Sprinkle with parmesan and parsley before serving.
