- 1 1/2 teaspoons baking powder

- 1 tablespoon sugar
- 1/4 cup finely chopped onion
- 3/4 cup buttermilk
- 1 large egg
- Vegetable oil for frying
Instructions
- In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- Add finely chopped onion to the dry mix.
- In a separate bowl, whisk together buttermilk and egg until combined.
- Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
- Heat 2 inches of oil in a deep fryer or heavy-bottomed pot to 350°F.
- Use a small scoop or spoon to drop tablespoon-sized portions of batter into the hot oil.
- Fry in batches, turning as needed, for 2–3 minutes or until golden brown.
- Remove with a slotted spoon and drain on a paper towel-lined plate.
- Serve hot with your favorite dipping sauce.
