- 1 ½ cups mashed roasted sweet potatoes
- ½ cup packed brown sugar
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- 2 large eggs
- ¾ cup evaporated milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- 1 9-inch pie crust, unbaked
Instructions
- Preheat your oven to 400°F. Scrub and pierce the sweet potatoes, then roast them for 45–50 minutes until fork tender. Let cool, peel, and mash until smooth.
- In a mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, eggs, cinnamon, nutmeg, ginger, salt, and vanilla extract.
- Stir in the melted butter and evaporated milk until the filling is smooth and creamy.
- Pour the filling into the unbaked pie crust and smooth the top with a spatula.
- Reduce oven temperature to 350°F. Bake the pie for 50–60 minutes until the center is set. A toothpick should come out clean.
- Let the pie cool completely before slicing. Serve with whipped cream or vanilla ice cream.

- For best flavor, use fresh, roasted sweet potatoes.
- This pie can be made a day ahead and refrigerated.
