Description

This delicious sweet potato pie is perfect for dessert, blending rich flavors of roasted sweet potatoes with warm spices.


Ingredients

  • 1 ½ cups mashed roasted sweet potatoes
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 2 large eggs
  • ¾ cup evaporated milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1 9-inch pie crust, unbaked

Instructions

  1. Preheat your oven to 400°F. Scrub and pierce the sweet potatoes, then roast them for 45–50 minutes until fork tender. Let cool, peel, and mash until smooth.
  2. In a mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, eggs, cinnamon, nutmeg, ginger, salt, and vanilla extract.
  3. Stir in the melted butter and evaporated milk until the filling is smooth and creamy.
  4. Pour the filling into the unbaked pie crust and smooth the top with a spatula.
  5. Reduce oven temperature to 350°F. Bake the pie for 50–60 minutes until the center is set. A toothpick should come out clean.
  6. Let the pie cool completely before slicing. Serve with whipped cream or vanilla ice cream.
