Steak Sandwiches

Description

Delicious steak sandwiches made with ribeye or sirloin, grilled to perfection and layered with cheese.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 8 ounces ribeye or sirloin steak thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika or chili powder
  • 1 small yellow onion thinly sliced
  • 1/2 small bell pepper thinly sliced (optional)
  • 1 clove garlic minced
  • 1 teaspoon Worcestershire sauce
  • 4 tablespoons unsalted butter softened
  • 4 slices sourdough or thick-cut sandwich bread
  • 4 slices sharp cheddar cheese
  • 2 slices provolone or mozzarella cheese

Instructions

  1. Season the sliced steak with salt, black pepper, and smoked paprika or chili powder, tossing to coat evenly.
  2. Heat the olive oil in a large skillet over medium-high heat until hot and shimmering.
  3. Add the steak in a single layer and cook for 2–3 minutes, just until browned on the outside but still tender, then transfer to a plate.
  4. In the same skillet, add the sliced onion and bell pepper with a pinch of salt and cook over medium heat until softened and lightly golden.
  5. Stir in the minced garlic and Worcestershire sauce, cooking for 30 seconds until fragrant, then return the steak and any juices to the pan and toss to combine. Turn off the heat.
  6. Spread the softened butter on one side of each slice of bread; these buttered sides will be the outsides of the sandwiches.
  7. Flip the bread so the unbuttered sides face up. Layer cheddar cheese on two slices, divide the steak mixture over the cheese, then top with provolone or mozzarella and the remaining bread slices, buttered side facing out.
  8. Wipe out the skillet if needed and place it over medium heat. Add the sandwiches and cook until the bottoms are golden brown and crisp.
  9. Carefully flip the sandwiches and cook the second side, pressing gently with a spatula, until the bread is deeply golden and the cheese is fully melted.
  10. Transfer the sandwiches to a cutting board, let rest for 1 minute, then slice and serve warm.

Notes

  • Optional bell pepper can be omitted if desired.
