Description

A delicious meatloaf topped with rich gravy.


Ingredients

  • 1 box Stove Top Stuffing Mix
  • 3/4 cup beef broth (low or no sodium can be used)
  • 2 large eggs
  • 2 Tablespoons Worcestershire sauce
  • 2 pounds lean ground beef (at least an 80/20 fat ratio)
  • 2 Tablespoons butter
  • 2 Tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 Tablespoon Worcestershire sauce
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F. Spray a 9×13-inch baking dish with cooking spray and set aside.
  2. Add the Stove Top Stuffing Mix to a large bowl. Stir in 3/4 cup of beef broth and let it sit for 5 minutes.
  3. Add the eggs and Worcestershire sauce, and stir to combine.
  4. Add the ground beef and mix it well, but try not to overmix it to prevent toughness.
  5. Transfer the beef mixture to the baking dish and form it into an even oval shape for even cooking.
  6. Bake for 45-50 minutes, until the internal temperature reaches 160°F. Allow it to sit at room temperature and cool slightly while making the gravy.
  7. In a medium saucepan, melt the butter over medium heat.
  8. Add all-purpose flour and whisk it in, cooking for 1 minute.
  9. Slowly stream in the beef broth while whisking to avoid lumps.
  10. Stir in the Worcestershire sauce and black pepper.
  11. Bring to a simmer and cook for 5 minutes until slightly thickened.
  12. Place the meatloaf on a serving platter, brush it with gravy, slice, and serve with more gravy over each portion.

Notes

  • For thicker gravy, add an extra tablespoon of flour.
  • Using clean hands to mix the ground beef helps to avoid overmixing.
