Description

This creamy chicken penne pasta is a perfect weeknight meal that combines tender chicken, sun-dried tomatoes, fresh spinach, and a rich Parmesan cream sauce.


Ingredients

  • 12 oz penne pasta
  • 2 boneless skinless chicken breasts, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Instructions

  1. Cook the penne pasta in a large pot of boiling salted water according to package instructions. Drain and set aside.
  2. Season the sliced chicken with salt, black pepper, and Italian seasoning. In a large skillet over medium-high heat, heat olive oil and cook the chicken until golden and cooked through, about 5-6 minutes. Remove chicken and set aside.
  3. In the same skillet, lower the heat to medium, add minced garlic, and cook for about 1 minute until fragrant. Stir in sun-dried tomatoes and cook for another 1-2 minutes.
  4. Pour in the heavy cream and bring to a simmer. Add grated parmesan cheese and stir until the sauce thickens.
  5. Add the cooked penne pasta, chicken, and spinach to the skillet. Toss until everything is coated in the sauce and spinach is wilted. Adjust seasoning if needed.
  6. Serve immediately, garnished with extra parmesan cheese if desired.

Notes

  • You can substitute the chicken with shrimp or keep it vegetarian by omitting the meat.
