Description
This creamy chicken penne pasta is a perfect weeknight meal that combines tender chicken, sun-dried tomatoes, fresh spinach, and a rich Parmesan cream sauce.

- 12 oz penne pasta
- 2 boneless skinless chicken breasts, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
Instructions
- Cook the penne pasta in a large pot of boiling salted water according to package instructions. Drain and set aside.
- Season the sliced chicken with salt, black pepper, and Italian seasoning. In a large skillet over medium-high heat, heat olive oil and cook the chicken until golden and cooked through, about 5-6 minutes. Remove chicken and set aside.
- In the same skillet, lower the heat to medium, add minced garlic, and cook for about 1 minute until fragrant. Stir in sun-dried tomatoes and cook for another 1-2 minutes.
- Pour in the heavy cream and bring to a simmer. Add grated parmesan cheese and stir until the sauce thickens.
- Add the cooked penne pasta, chicken, and spinach to the skillet. Toss until everything is coated in the sauce and spinach is wilted. Adjust seasoning if needed.
- Serve immediately, garnished with extra parmesan cheese if desired.
Notes
- You can substitute the chicken with shrimp or keep it vegetarian by omitting the meat.
