Deliciously soft and sweet banana pudding cinnamon rolls topped with creamy frosting.
Ingredients
Scale
- 1 cup warm milk
- 2 ¼ teaspoons active dry yeast
- ¼ cup granulated sugar
- 2 large eggs
- ⅓ cup unsalted butter, melted
- 1 teaspoon salt
- 4 cups all-purpose flour
- ½ cup unsalted butter, softened
- ¾ cup brown sugar
- 1 tablespoon ground cinnamon
- 1 box instant vanilla pudding mix
- 2 ripe bananas, mashed
- 1 cup crushed vanilla wafer cookies
- 4 ounces cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 ½ cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- Banana slices
- Crushed vanilla wafers
Instructions
- Prepare the Dough: In a large bowl, combine warm milk, yeast, and sugar. Let the mixture sit for about 5 minutes until foamy. Add eggs, melted butter, and salt. Gradually mix in the flour until a soft dough forms. Knead for about 8–10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm spot for about 1 hour or until doubled in size.
- Make the Filling: In a small bowl, mix softened butter, brown sugar, cinnamon, pudding mix, mashed bananas, and crushed vanilla wafers.
- Roll and Fill: Roll the dough into a large rectangle on a lightly floured surface. Spread the banana pudding filling evenly over the dough. Starting from the long edge, tightly roll the dough into a log. Slice into 12 equal rolls.
- Second Rise: Arrange the rolls in a greased baking dish. Cover and let them rise again for 30–45 minutes until puffy and soft.
- Bake: Bake at 350°F for 25–30 minutes until golden brown and cooked through.
- Prepare the Frosting: Beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth and creamy. Spread the frosting over warm rolls so it melts into every swirl. Top with banana slices and crushed vanilla wafers if desired.
