A hearty and nutritious vegetable soup that is perfect for any season.
Ingredients

- 2 tablespoons oil
- 4 cups chopped green cabbage (about 1/3 large head)
- 3 large carrots (peeled and chopped)
- 2 ribs celery (finely chopped)
- 1 medium onion (finely chopped)
- 1 tablespoon tomato paste
- 1 tablespoon Italian seasoning
- 2 cloves garlic, finely minced
- 1 teaspoon salt
- ¼ teaspoon pepper
- 3 cups low sodium chicken or vegetable broth
- 1 can diced tomatoes (28oz/798ml)
Instructions
- In a large soup pot, heat oil over medium heat.
- Add cabbage, carrots, celery and onion and cook, stirring often, until onion is translucent, about 5 minutes.
- Add the tomato paste, Italian seasoning, garlic, salt and pepper. Cook and stir for 1-2 minutes.
- Add broth and tomatoes. Bring to a simmer, cover and reduce heat to medium-low.
- Simmer, stirring occasionally, until all vegetables are tender (40-60 minutes, depending on your preferred consistency).
- Season to taste and serve.
Notes
- For a vegetarian option, use vegetable broth.
- This soup can be stored in the refrigerator for up to 3 days.
- Feel free to add other vegetables you have on hand.
