Description

Delicious and healthy cucumber chicken roll ups perfect for a snack or appetizer.


Ingredients

  • 1 cup cooked chicken breast (shredded or diced)
  • 1/4 cup cream cheese (softened)
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large cucumbers (sliced thinly lengthwise)

Instructions

  1. In a bowl, combine the shredded chicken, cream cheese, dill, lemon juice, salt, and pepper. Mix until well combined.
  2. Lay out the cucumber slices on a flat surface.
  3. Place a spoonful of the chicken filling at one end of each cucumber slice.
  4. Roll the cucumber slice around the filling tightly and secure with a toothpick if necessary.
  5. Arrange the roll ups on a plate and serve immediately or refrigerate until ready to serve.
