Delicious and healthy cucumber chicken roll ups perfect for a snack or appetizer.
Ingredients

- 1 cup cooked chicken breast (shredded or diced)
- 1/4 cup cream cheese (softened)
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large cucumbers (sliced thinly lengthwise)
Instructions
- In a bowl, combine the shredded chicken, cream cheese, dill, lemon juice, salt, and pepper. Mix until well combined.
- Lay out the cucumber slices on a flat surface.
- Place a spoonful of the chicken filling at one end of each cucumber slice.
- Roll the cucumber slice around the filling tightly and secure with a toothpick if necessary.
- Arrange the roll ups on a plate and serve immediately or refrigerate until ready to serve.
Notes
- For best results, use freshly cooked chicken.
- These can be prepared a few hours in advance and stored in the refrigerator.
