Ingredients

- 1 1/2 cups cottage cheese
- 4 large eggs
- 1 tsp vanilla extract
- 2 tbsp sugar
- 1 tbsp baking powder
- 1 cup all-purpose flour
- 1/4 cup canola oil (for frying)
Instructions
- In a large mixing bowl, combine cottage cheese, eggs, vanilla extract, and sugar. Whisk until smooth.
- Add baking powder and gently whisk to incorporate.
- Gradually add all-purpose flour, mixing just until the batter is smooth and no lumps remain. Do not overmix.
- Heat canola oil in a non-stick skillet over medium heat until hot but not smoking.
- Pour about 1/4 cup of batter per pancake onto the hot surface.
- Cook for 2-3 minutes per side, until golden brown and edges are set. Flip carefully.
- Serve immediately with your favorite toppings.

- Do not overmix the batter for fluffy pancakes.
