Description

Delicious and fluffy pancakes made with cottage cheese, perfect for breakfast.


Ingredients

  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 cup all-purpose flour
  • 1/4 cup canola oil (for frying)

Instructions

  1. In a large mixing bowl, combine cottage cheese, eggs, vanilla extract, and sugar. Whisk until smooth.
  2. Add baking powder and gently whisk to incorporate.
  3. Gradually add all-purpose flour, mixing just until the batter is smooth and no lumps remain. Do not overmix.
  4. Heat canola oil in a non-stick skillet over medium heat until hot but not smoking.
  5. Pour about 1/4 cup of batter per pancake onto the hot surface.
  6. Cook for 2-3 minutes per side, until golden brown and edges are set. Flip carefully.
  7. Serve immediately with your favorite toppings.
