Description

Ingredients

  • 1 cups water

  • 2 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon toasted sesame oil
  • 0 cups cooking oil
  • 2 ounces fresh sushi-grade fish
  • 1 medium diced avocado
  • 0 cups cucumber slices
  • spicy mayo or eel sauce (optional drizzle)

Instructions

  1. Begin by rinsing sushi rice under cold water in a fine-mesh strainer for 3-5 minutes.
  2. Cook the rinsed rice with water, usually 1 ¼ cups, according to your appliance’s instructions or boil and simmer for 18-20 minutes.
  3. Whisk together rice vinegar, sugar, and salt, then fold mixture into warm rice.
  4. Spread the seasoned rice on a baking tray, press down to form a compact block, cover and refrigerate for at least 3 hours.
  5. Once chilled, lift the rice from the tray, slice into bite-sized pieces, pat dry with a paper towel.
  6. Heat neutral cooking oil over medium heat and fry rice pieces for 1-2 minutes on each side until golden brown.
  7. Transfer fried bites to a wire rack to drain excess oil and serve warm with toppings.

  • Substitute sushi rice with short-grain rice if necessary.
  • Ensure proper measurement of water for perfect texture.
  • Honey can also be used as an alternative for sugar.
