- 1 cup cucumber, diced

- 2 tablespoons olive oil
- 1 tablespoon lemon juice (Add more for added zing)

Instructions
- Rinse chickpeas under cold water to remove excess salt and drain well.
- In a large mixing bowl, combine drained chickpeas with curry powder, ensuring they are well-coated.
- Add diced red bell pepper, red onion, and cucumber to the bowl, contributing crunch and flavor.
- Chop fresh cilantro and sprinkle it into the bowl.
- Drizzle olive oil and lemon juice over the mixture and season with salt and pepper to taste.
- Gently toss all ingredients together to combine evenly, taking care not to mash the chickpeas.
- Taste and adjust seasonings if necessary, adding more salt or lemon juice.
- Serve immediately or chill in the fridge for about 30 minutes to meld flavors.
