- 1 cup bell peppers, diced (any color)
- 1 cup zucchini, sliced
- 1 cup red onion, sliced
- 1 cup mushrooms, sliced
- 1 cup pineapple, diced (fresh or canned)
- 4 pieces large tortillas (whole wheat or regular)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
Instructions
- In a mixing bowl, combine the diced bell peppers, zucchini, red onion, and mushrooms.
- Add olive oil, garlic powder, salt, black pepper, and cumin. Toss to coat the vegetables evenly.
- Preheat the grill to medium-high heat.
- Place the seasoned vegetables on the grill and cook for about 10-12 minutes, turning occasionally until tender and slightly charred.
- Warm the tortillas on the grill for 1-2 minutes on each side.
- Remove the tortillas and fill each with grilled vegetables and diced pineapple.
- Fold the sides of the tortillas to create wrap boats.
- Serve immediately while warm, optionally with a side of salsa or yogurt.
