Ingredients

  • 1 cup bell peppers, diced (any color)
  • 1 cup zucchini, sliced
  • 1 cup red onion, sliced
  • 1 cup mushrooms, sliced
  • 1 cup pineapple, diced (fresh or canned)
  • 4 pieces large tortillas (whole wheat or regular)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin

Instructions

  1. In a mixing bowl, combine the diced bell peppers, zucchini, red onion, and mushrooms.
  2. Add olive oil, garlic powder, salt, black pepper, and cumin. Toss to coat the vegetables evenly.
  3. Preheat the grill to medium-high heat.
  4. Place the seasoned vegetables on the grill and cook for about 10-12 minutes, turning occasionally until tender and slightly charred.
  5. Warm the tortillas on the grill for 1-2 minutes on each side.
