  • 1 Tbsp red onion (Minced for crunch)
  • 1 unit jalapeño (Minced for spice)
  • 2 Tbsp fresh cilantro (Chopped for freshness)
  • salt and pepper (To taste)
  • 1 unit Roma tomato (Diced for contrast)
  • chile powder (For garnish)

Instructions

  1. Carefully hard boil and peel the eggs, ensuring they are completely cooled.
  2. In a bowl, combine food coloring, white vinegar, and water to create the dye.
  3. Divide the hard-boiled egg whites among cups or mugs and dip each into the coloring mixture.
  4. Mash the avocados until creamy and smooth.
  5. Add lime juice, minced red onion, minced jalapeño, and cilantro to the mashed avocados and mix thoroughly.
  6. Season with salt and pepper to taste.
  7. Gently fold in diced Roma tomato.
  8. Fill the colored egg whites with the avocado mixture and sprinkle with chile powder.
