A comforting slow cooker meal featuring tender chicken, wild rice, and vegetables.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 1 cup wild rice blend
- 2 medium carrots, chopped
- 2 stalks celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- ½ cup heavy cream (optional)
Instructions
- Chop vegetables into bite-sized pieces.
- Place chicken at the bottom of the slow cooker, layer with rice, carrots, celery, onion, garlic, thyme, rosemary, and pour in the chicken broth.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred cooked chicken directly in the pot using two forks; stir in cream if desired.
- Serve hot in bowls garnished with fresh parsley.
