Description

A comforting slow cooker meal featuring tender chicken, wild rice, and vegetables.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lbs)
  • 1 cup wild rice blend
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ cup heavy cream (optional)

Instructions

  1. Chop vegetables into bite-sized pieces.
  2. Place chicken at the bottom of the slow cooker, layer with rice, carrots, celery, onion, garlic, thyme, rosemary, and pour in the chicken broth.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred cooked chicken directly in the pot using two forks; stir in cream if desired.
  6. Serve hot in bowls garnished with fresh parsley.
